ACME, the NoHo restaurant from partners Jean-Marc Houmard, Jon Neidich and Huy Chi Le, is now open after undergoing a culinary transformation led by new executive chef and partner Brian Loiacono. Re-introducing ACME as a contemporary bistro, Loiacono combines his Italian-American upbringing with his classic French training to create a seasonal neighborhood restaurant that is quintessentially New York. Formerly executive chef of Daniel Boulud’s db Bistro Moderne, Loiacono’s considerable experience in French kitchens and Italian roots are evident in his menu classic and inventive dishes. Starters include house specialties like Clams Casino with Bone Marrow and Chowder and Crispy Pork Rillette with Togarashi & herbs served with Tonnato Sauce. Additional appetizers include Butternut Squash Steak with Stracciatella & Sunflower Seed Granola and Fluke Tartare with Blood Orange & Elderberry Capers. There is also a selection of housemade pastas like Loiacono’s Veal Agnolotti with Salva Cremasco & Truffle and Spinach Linguine with Razor Clams and Breadcrumbs. Entrees include Brick Chicken with Leek, Onion, and Capers; Black Bass with Burnt Orange & Oregano; and Skirt Steak with Caramelized Endive. Dev Johnson a veteran barman of Employees Only oversees the cocktail program. Wine director Nicole Hakli has joined the ACME team to helm the restaurant’s already noteworthy wine program. A veteran of The Nomad and Eleven Madison Park, Hakli is bolstering a diverse, accessible selection of restrained and balanced classic Old World styles, bringing her fresh perspective to ACME’s inventory.
