We opened our first Louisville restaurant location downtown two years ago in the spring of 2009. Our first restaurant was built out of an old shoe repair shop with our own bare hands. After one intensely hectic and successful first year, we found the time to start construction on our second location in St Mathews. Six months ago we finished and opened our doors in 2010.There are 3 local owners owners of Chop Shop Salads: George Barrett, Brad Vetter, and Mark Kapfhammer. We all grew up together in Louisville Ky. We are just 3 good friends, who wanted to work for ourselves while delivering a great product to the city in which we were raised. What makes us stand out from the pack is who we are. We are young local guys starting something new. We understand the customer because that is who we were just two years ago. No stuffy executives worried about profit margins and cutting quality for a quick buck. You wont find this anywhere else in Louisville, KY. We prepare fresh produce and protein right in front of you. Produce that was bought in this city, today, from local companies. No bagged lettuce, no pre-made, no processed food, nothing but a fresh meal. A meal that would take you hours to shop for and prepare at home, we can make in just a minute. Who else does that. The owners work there every day listening to what the public wants.Our Food, Ideas, and People are all fresh. Come eat salad prepared by people who know and love salad as much as you do.
