One Saturday afternoon my husband and I found ourselves in Bushnell with a couple of hours to kill. We drove around for a while looking for a local, non-chain place to eat, and found Coyote Rojo. WOW! This place has amazing food, service and prices. The chips were light and crispy, the salsa is homemade and has just enough spice - no mouth murdering heat! We had their lunch special, two choices with a side of beans, rice, and a salad. The husband had a tamale, and a chile rellenos. I had a soft taco and a cheese enchilada, and we both had their amazing iced tea. The guacamole was actually guacamole and not "guacamole salad" that most places feed you. I even ate most of the beans and rice, which I normally leave because they very rarely have any flavor, or are dry, beans are overcooked etc. Our bill was a whopping $16! We live about 20 miles away and plan on going back next weekend with the entire family. Give it a try!
